What is a Southern Tomato Pie Recipe?

This is a delicious pie that managed to make everyone in my house smile and caused the youngest of them to grin hugely in the head as he declared it the most amazing tomato ever and then ordered a second slice of the pie.

My sweet friend and blog reader Henny has been emailing me in response to my newsletter for a few years now, ever since before we moved to Ohio. She has given me great advice for my canine mom over the years and made some recipes as well.

This Southern Tomato Pie recipe is one of hers and it’s definitely a keeper. I have to admit that when I first heard “Tomato Pie” I wasn’t quite sure what to expect.

I’ve had tomato tart and tomato focaccia in the past and they were both very tasty, but this tomato pie? It’s a whole new world of tomato goodness and I’m so excited to share Henny’s Tomato Pie with you today.

If you’re blessed with an abundance of summer tomatoes, put this recipe at the top of your list. Along with the BLT salad I shared earlier this week, we’ve been to tomato heaven recently.

With plenty of fresh, sweet tomatoes, cheese, mayonnaise (believe me, please, it simply works here), fresh basil, green onions, and black pepper, this is a delicious summer pie like no other.

This pie spreads two thumbs up the length of the kitchen table. Serve it up as a light meal with a salad or add some grilled chicken thighs if you want to whip up.

tomato pie ingredients

  1. Heat the oven to 375 degrees Fahrenheit. Place pie crust in a deep pie plate and prick with a fork. (This allows steam to escape and prevents the crust from puffing up while it’s baking.)
  2. Bake the crust in advance for 10 minutes, until very lightly browned. Absolutely wonderful. Bake pie crust in a deep pie dish, according to pie crust recipe instructions. Leave the crust to cool completely before stuffing.
  3. While the peel is cooling, chop the tomatoes and sprinkle with a little salt. Lay them out on paper towels and wipe them once with additional paper towels before placing them in the refrigerated pie shell.
  4. Alternate layers of tomatoes, sprinkle with green onions and basil. (You will get 2-3 layers depending on the thickness of the tomato slices.) Stir the mayonnaise and cheese together. Add a lot of black pepper.
  5. Put the cheese mixture on top of the pie. Put the pie in the oven at 375 degrees Fahrenheit, and then reduce the temperature to 350 degrees Fahrenheit. Bake for 30 minutes until the cheese melts and begins to turn brown. If the crust starts to get too dark, use a pie crust cover or wrap the edge of the pan with foil.
  6. Remove from the oven and let cool for at least 20 minutes before slicing. For clean slices, allow pie to cool to room temperature.
