Why Delicious Calico Beans Recipe?

With all the barbecues, food parties, and family gatherings going on on our last long weekend of summer, I thought it was time to whip out my easy Calico Beans recipe. These thick baked beans are a real crowd pleaser and the perfect dish to bring to summer food. You’ve probably heard them referred to as Cowboy Beans, well, they’re the same and delicious!

I love to cook baked beans from scratch, but when I had a house full of little ones, this was the recipe I turned to often. It calls for canned beans, and it’s as easy as can be, and my two youngsters loved them. Especially our eldest son, Ryan, which is why they will forever be referred to in our home as Ryan’s favorite cereal.

Delicious Calico Beans Recipe Ingredients Notes

  • bacon Great baked bean recipes all have one thing in common. They start with bacon!
  • Minced meat I use 90% lean ground beef.
  • yellow onion
  • Pork and beans You’ll need two 28-ounce cans of pork and good quality beans, such as Van Camps. Put the contents of the can in a colander and let the liquid drain (do not rinse it). The other can is left undried.
  • kidney pills – Two packages, dispensed.
  • Pinto beans or lima Traditional calico bean recipes call for lima beans, also known as butter beans. But I will warn you, they are beans with a very unique flavor and some people just don’t like them. You can substitute any other type of beans you want. Pinto, white or black beans are all great options.
  • barbecue sauce Your favorite brand. We love Kinder’s Mild.
  • light brown sugar
  • apple cider vinegar
  • liquid smoke flavor A little liquid smoke goes a long way to add a great smoky flavor to these cereals.
  • Salt and freshly ground black pepper

How to make Delicious Calico Beans Recipe

  1. Place the bacon in a Dutch oven and cook over medium-high heat until tender. Transfer them to paper towels to drain. When cool enough, break it into small pieces and set aside. Drain all but a small amount of bacon grease from the pot.
  2. Place the ground beef and onions in the Dutch oven and cook, stirring occasionally, until the beef is tender and cooked through and the onions are soft. Drain the fat from the pot and return it to the stove.
  3. Add pork, beans, ham and beans with liquid, beans, pinto beans, and bacon pieces.
  4. Add the BBQ sauce, brown sugar, vinegar, liquid smoke, salt and pepper and mix well. Cover the Dutch oven and bake for an hour in a preheated 350°F oven.

Delicious Calico Beans Recipe tips

Why are they called calico beans

One thing all calico bean recipes have in common is that they require a variety of different colored beans. Most recipes call for pork, kidney beans, red kidney beans, light-colored or white lima, or kidney beans. Just like the kitties of the same name, this color combination is how they got their name.

Can I make calico beans in a slow cooker?

Yes! Prepare the beans on the stove, according to the directions, but instead of baking them, transfer them to a 6-quart or larger slow cooker. Cook over low heat for at most 3 hours, flipping halfway through the cooking time. Remember that canned beans are already cooked, so avoid cooking them for longer than 3 hours in a slow cooker, or they may become mushy and undesirable.

Can I make pre-baked beans?

Absolutely. Most baked bean recipes, including this one, warm nicely. Make it up to 2 days in advance, let it cool and then transfer to an airtight container and refrigerate immediately. Reheat gently on the stovetop or cover in a 350°F oven for 30 minutes, or until completely heated through. For longer storage, see freezer instructions below.
