A triple batch of these pies (about 18-20 pies) can be made using a 24-ounce container of cottage cheese.

If you find that you are not a fan of seeing little bits of cottage cheese melt in the pancakes, (depending on the size of the curd and the different brand, you will see a little bit of the cottage cheese melt in the fluffy pancakes) Mix the cheese, eggs, and maple syrup in a blender and puree until smooth before proceeding with the recipe .

Gently stir the dry ingredients into the liquids in a mixing bowl until combined. (Do not combine dry and wet in a blender.)

All that said, I promise you won’t taste the bits of cottage cheese in pies. Make and enjoy the pie recipe as written below.

  1. Combine cheese, eggs, and maple syrup in a mixing bowl. Stir until smooth. Add flour, baking powder and salt. stir again.
  2. Heat a flat-bottom, nonstick frying pan or electric griddle (I love this grill!) over medium heat. Grease a frying pan or grill with a little butter, then pour about 1/4 cup of the mixture onto the baking sheet for each muffin.
  3. Leave the cooking undisturbed until it begins to bubbles on the top and is slightly browned on the bottom. Flip the second side and cook until golden brown. Serve warm with toppings of your choice.
