Why I make Amazing Chicken Caprese Recipe?

As much as I love cooking, I always look forward to a meal outside. It is not easy when you have young children.

I will never forget the amount of planning and organization that had to happen for a night out with my husband when the boys were young. It was a very big ordeal that required a babysitter to line up and plan and cook a meal they could eat in our absence. For years now, we’ve been able to hop in the car and go, and I’ll forever consider it a true luxury. The effort is real and those memories never fade.

This chicken caprese recipe was inspired by the caprese salad we always ordered when we hit up our favorite little Italian spot in California. It has the basics – slices of fresh mozzarella with layers of ripe red tomatoes and basil, but it also includes prosciutto and whole balsamic vinegar. Simple and perfect. With a little bread and some wine, we could easily call that dinner. I thought about this and decided to add some chicken and do just that.

This is a recipe that has had a while to season (pun intended). It was first posted here on Valerie’s Kitchen Road in 2013. Since then I’ve had time to work with it and make some improvements including a simple chicken marinade that ensures the chicken will be tender and flavorful and a great way to cook persciutto.

They are all prepared in one pan, starting with the stovetop and ending with the oven. Chicken Caprese is an amazing restaurant quality meal on the plate.

Amazing Chicken Caprese Recipe ingredients

  • chicken You will need thin slices of boneless and skinless chicken breast. If it’s a regular thickness, hit it with a hammer about an inch thick or use a sharp knife to slice it vertically through the center to make two cuts.
  • Lemon juice – From fresh lemons, not bottled.
  • Extra virgin olive oil
  • Dijon Mustard
  • Rosemary Fresh or dried rosemary will work well.

  • Kosher salt and freshly ground black pepper

  1. Mix dressing ingredients and place in a resealable plastic bag.
  2. Add the chicken, squeeze out as much air as possible and seal the bag. Slide the chicken into the bag until well coated with the marinade and place in the refrigerator for at least 1 hour, up to 8 hours.

  • cherry tomatoes I like to use a can of multicolored cherry tomatoes or grape tomatoes for a nice color contrast.
  • balsamic vinegar
  • Extra virgin olive oil
  • minced garlic
  • sugar A little sugar enhances the sweetness of the tomatoes, which get sweeter when cooked in the oven.
  • Salt and freshly ground black pepper
  • Prosciutto – I include this as an optional item because I know it can be expensive. This dish is absolutely delicious without it, but the crunchy prosciutto adds a really nice ingredient to the recipe. See below for more information on this.
  • Fresh mozzarella cheese Fresh mozzarella cheese comes sliced ​​now which is really nice.

  • Parmesan – I will also use Pecorino Romano cheese from time to time. If you really want your Parmesan to stand out, try shaving it with a box grater or you can use a vegetable peeler or a very sharp knife. Use a light touch for a gentle shave.

How to make crispy prosciutto in the oven

Crunchy prosciutto is an easy way to add deep flavor to an appetizer, salad, or pizza fresh out of the oven. It’s like crumbled bacon but it’s fancier.

  1. Heat the oven to 375 degrees Fahrenheit. Line a baking tray with parchment paper or aluminum foil and spread the prosciutto in an even layer.
  2. Bake for 10 to 15 minutes (depending on thickness) until well done. Remove from the oven and set aside while you prepare the chicken

How to make Amazing Chicken Caprese Recipe

  1. In a medium mixing bowl, combine cherry tomatoes, balsamic vinegar, olive oil, minced garlic, sugar, salt, and pepper. Mix well until combined and set aside.
  2. Heat olive oil in a 12 to 14 inch skillet over medium-high heat. Add chicken (eliminate marinade) and cook 3 minutes per side, or until golden brown on both sides.
  3. Remove the pan from the heat and pour the tomato mixture and all the liquid in the pot evenly over and around the chicken.
  4. Cut the fresh mozzarella slices into small pieces and place them on top.
  1. Bake the chicken caprese, uncovered, for 8 to 10 minutes or until the cheese is melted, the tomatoes are tender, and the chicken has an internal temperature of 165 degrees Fahrenheit when measured in the thickest part with an instant-read thermometer.
  2. Sprinkle basil on top, sprinkle with shredded or grated Parmesan cheese and pieces of crunchy prosciutto and serve.

  • 1 ½ pounds or pounds for weight Boneless and skinless chicken breasts Thin slices or see directions below

  • 1 Lemonade
  • 2 big spoons Extra virgin olive oil
  • 1 Tablespoon Dijon mustard
  • 1 small spoon minced garlic
  • 1 Tablespoon Fresh chopped rosemary or 1 teaspoon dried
  • ¾ small spoon kosher salt
  • Freshly ground black pepper, to taste

For marinated tomatoes

  • 10 ounce Multicolored cherry or grape tomato Half
  • 2 big spoons balsamic vinegar
  • 2 small spoons Extra virgin olive oil
  • 1 small spoon minced garlic
  • ¼ small spoon Sugar
  • ¼ small spoon salt
  • Freshly ground black pepper, to taste

For the rest

  • 2 ounce Prosciutto my choice
  • 6 ounce Fresh mozzarella cheese sliced
  • ¼ Cup chopped fresh basil
  • ¼ Cup Shredded Parmesan cheese or Pecorino Romano cheese

  • If the chicken is more than an inch thick, place it on a cutting board and use a sharp knife to cut all the pieces through the cut, vertically, forming two thin pieces. If necessary, beat chicken an inch thick. Cut into smaller pieces, if necessary. Transfer the chicken to a resealable plastic bag and set aside.
  • Combine marinade ingredients in a small bowl and pour over chicken. Squeeze as much air out of the bag as possible and close it. Slide the chicken into the bag so that it is well coated with the marinade. Refrigerate for at least 1 hour and up to 8 hours.
