The best meat taco ever has been a staple of my meal plan for years now, but sometimes I like to mix it up a bit.

My friend Aji inspired this black bean and spinach taco and let me tell you, it was absolutely a wonderful surprise how much the whole family enjoyed it – spinach and all.

It was only natural to try this veggie-filled taco recipe afterwards. Spicy beef is mixed with sweet peppers, onions, corn, and black beans to make a super-creamy skillet that’s perfect for stuffing tacos, burritos, quesadillas, and more.

Nothing makes your favorite meat taco better than a generous helping of homemade taco seasoning. Loaded with an abundance of flavor and a bit of heat, taco seasoning is used more than anything else in my spice cabinet.

Slightly spicier than standard taco mixes and so adaptable to your individual tastes, these are some of my favorite seasonings in the kitchen.

  • red chilli powder
  • red pepper flakes
  • Cayenne pepper
  • dried seasoning
  • smoked red pepper
  • ground cumin
  • garlic powder
  • onion powder
  • kosher salt
  • Freshly ground black pepper
Filled with peppers, black beans, and corn, taco meat adds to a taco evening we all love.

Is there any end to great ideas for your next taco night? Red Chile Chicken Tacos, Carnitas Street Tacos, Carne Asada Steak, and Pulled Pork Tacos are just a few meals my family enjoys.

Cheddar BBQ Chicken Oven Tacos, Bacon, and Eggs are two funky options that always rank two thumbs up, too.

This fish taco with lime jalapeno sauce is my middle son’s favorite.

No Taco Night menu would be complete without everyone’s favorite Frito Pie {aka Walking Tacos} in the mix, too.

  • The ground beef is stewed, stewed, and sprinkled with spices as it cooks. Add the onions and continue cooking when the meat is halfway cooked.
  • Strain off any excess fat and add pepper. Stir until smooth. Continue to cook for 3-4 minutes, until the peppers soften slightly.
  • Add the black beans and corn, and stir until combined. Continue cooking for an additional minute to warm up the beans. Add spinach, if desired, and stir until wilted.
  • Serve immediately or let cool and divide into freezer-safe containers. Have fun!

Feel free to add more seasoning if needed. The key to all the flavor here is the generous amount of Mexican spice.
