Just like a regular crunchy rice pudding, this Scocchio recipe uses minimal ingredients and requires no baking. To make Rice Krispies with Peanut Butter, you will need granulated sugar, light corn syrup, creamy peanut butter, Rice Krispies, semi-sweet chocolate chips, and candy chips.

I only made this recipe as written, so I can’t say for sure if there is a corn syrup alternative that you can use. However, a few UK readers have reported successful use of golden syrup and glucose syrup in place of corn syrup. Hope it helps!

I prefer making Scotchero with Jif peanut butter, but if you prefer using natural creamy peanut butter that should work as well. Just be sure to give your natural peanut butter a really Stir well before adding to the crispy rice mixture, as natural peanut butter tends to separate more easily.

- 1 cup Karo drink
- 1 cup Peanut Butter Creamy, I prefer Jeff
- 1/4-1/2 small spoon salt
- 1/2 small spoon vanilla
- 5 1/2 Glasses Rice Krispies
- 1 3/4 cup Semi-sweet chocolate chips
- 1 3/4 cup Butterscotch chips
- Heat the sugar and Karo syrup over medium heat until dissolved.
- Remove from heat and add peanut butter, vanilla, and salt.
- Add the crunchy rice and stir to combine.
- Press into a greased 9″ x 13″ skillet.
- Heat the chocolate and butterscotch chips over medium heat until melted and spread over the crispy rice.
- Let it cool and eat!
