Healthy Spinach Pasta Salad Recipe

  1. Bring a large pot of water to a boil with 1 tablespoon of kosher salt. Cook pasta according to set directions. Drain it from the water, but do not rinse it.
  2. While the pasta is cooking, cut the onion into slices and chop the garlic. (I use this garlic press.) Combine onion and garlic in a large mixing bowl.
  3. Add olive oil and vinegar to cover the onions. After the pasta has dried, add it to a mixing bowl and stir well. Add tomatoes and spinach.
  4. Stir everything together until well blended and sprinkle generously with salt and pepper. Taste the salad and add more salt and pepper as needed. Sprinkle with Parmesan cheese if desired.
