Topped with fresh strawberry cream or classic buttercream frosting, this cake has received more thumbs up over the past 10 years than anything else I’ve baked. The flavor combination is absolutely perfect with the flavors of almond and vanilla.

Several years ago, I asked my best friend if I would make her a white gluten-free cake. In my relative novelty of gluten-free baking, I assured her that I could do it. Ha.
It took me 6, maybe 7-8, attempts of different recipes, (I stopped counting after I threw the third mess in the trash.) The taste and/or texture weren’t quite right.
If you’re familiar with gluten-free baking, you probably already know that traditional chocolate dessert recipes are easy to convert to gluten-free most of the time.
This is evidenced by the best gluten-free chocolate cake, no one believes anyone is gluten-free. Unfortunately, this is not true for all gluten-free baking recipes.
Chocolate provides so much flavor that without it, the “unique” flavors of gluten-free flour alternatives often appear. This made it more difficult to achieve the classic white cake flavor.

I’ll be the first to admit that I’m very picky about gluten-free bread. (I caused a lot of my husband’s weariness because I decided something wasn’t quite right, while he and my boys happily devoured it. ha)
Since I’m not restricted to eating traditional versions myself, I often make both ingredients side by side to taste both versions and see if a gluten-free recipe fits. “Good enough for gluten-free” isn’t something I’d like to share with you.
I am happy to tell you that this is the Delicious Gluten Free White Cake. This cake very favorably. Over the past few years, I’ve made this cake with the exact recipe below countless times and have served it to over a dozen people.
It has received great reviews from everyone and they have all questioned me more than once as to whether it is gluten free or not. (This, my friends, is a sign of a successful gluten-free recipe!)

- Preheat the oven to 350 degrees. Grease (2) 8 round cake molds with butter and line the bottom of each mold with a circle of parchment greased with butter.
- Stir the dry ingredients together and set aside.
- Beat eggs and sugar together until creamy.
- Add half of the dry ingredients and whisk again.
- Add the curd, butter, vanilla and almond extracts and mix well.
- Add the rest of the dry ingredients and beat until blended.
- Divide the mixture between the buttered cake pans.
- Bake in the center of the oven for 35-40 minutes, until the cake is lightly browned and a toothpick comes out clean.
- Remove and let cool for at least 30 minutes, before inverting onto a wire rack to finish cooling.
- Frost as desired.
This gluten-free white cake recipe works great as a muffin to make a gluten-free birthday cake. My middle son loves this cake with Fluffy Chocolate Frosting. The possibilities with this cake recipe are endless.
