  • 1/2 Cup whole wheat flour
  • 1/4 Cup oatmeal *whole wheat
  • 1/2 small spoon baking powder
  • 1/2 small spoon salt
  • 1/2 small spoon cinnamon
  • 1/4 small spoon Cardamom my choice
  • 1/2 Cup apple butter * See note
  • 1/3 Cup Brown sugar
  • 1 an egg
  • 1 small spoon vanilla
  • 1 medium apple grated with peel
  • 1 1/2 Cup Old oatmeal
  • 2 big spoons nuggets my choice
  • 3/4 Cup grapes / raisins Or any dried fruit you like

Healthy Breakfast Cookies Recipe instructions

  • Heat the oven to 375 degrees.
  • Mix the flour, cinnamon, baking powder, salt and spices together.
  • Add apple butter, oil, sugar, eggs and vanilla.
  • Add apples, oatmeal, pepitas and raisins.
  • Place spoons on a buttered cookie sheet and crush them down to about ½ inch because they won’t flatten on their own.
  • Bake for 15 minutes and cool on rack.
  • Store in an airtight container in the refrigerator.
  • You can replace half of the apple butter with oil or apple juice.
