Well, at some point before leaving, we decided that it would be better to invent our own, so here lies our decision on your computer screen.

Simple ingredients come together to make choux pastryIt is a French pastry dough used to make things like cream puffs and eclairs. In this case, we will fry the dough to make crullers. Here’s everything you need:

  • Water – This creates a higher moisture content which causes the dough to evaporate. This allows the starch in the flour to form a gel.
  • Flour – for the structure! Read above.
  • salt – for flavor.
  • eggs – This softens the dough to be the right consistency.
  • Vegetable oil – used for frying!

  • soft sugar – to sweeten the glaze.
  • Milk – To soften it to the right consistency (think school glue).
  • vanilla – for flavor.
  • lemon extract – For more flavor (optional but recommended).

HOW TO MAKE Delicious French Cruller Donut Recipe

1. Make choux pastry

Bring water and butter to a boil in a small saucepan. Once the mixture boils, add the flour and salt until combined. Remove from heat and cool for 3 minutes.

Crack the eggs into a small bowl. Mix the eggs into the warm mixture one at a time until the mixture is completely smooth.

2. Piping + Freezing Circuits

Transfer to a piping bag with a large grooved tip and tube in circles on parchment-lined baking sheets.

Put it in the freezer for 30 minutes.

3. Make the glaze

While the dough is freezing, stir all the ingredients together to get the glaze until smooth and fluid…but not too runny!

Although you can bake Crullers, they will look more like whipped cream than crunchy cookies. So I recommend frying! I promise you it’s not as difficult as it seems.

4. Filling + heating oil

Pour the vegetable oil into a large saucepan with high sides so that there is at least 3 inches of grease. Heat the oil between 325-350 degrees so these little ones can get crunchy and delicious.

5. Fry Croliers

Once the oil is hot and you can peel the frozen cartons of parchment paper in one piece, give these kids a hot bath! Drop the frozen crullers one at a time into the hot oil and fry for 1 minute per side or until slightly golden.

6. Glaze + cool

Remove to a paper towel to drain and immediately cover with glass. Place on cooling rack to allow excess glaze to drip off. After 40 minutes or so, the glaze should harden on the molds. Best served warm, immediately glazed.

  5. Drop the frozen crullers one at a time into the hot oil and fry for 1 minute per side or until slightly golden. Remove to a paper towel to drain and immediately cover with glass. Place on cooling rack to allow excess glaze to drip off. After 40 minutes or so, the glaze should harden on the molds. Best served warm, immediately glazed.
