Zucchini light chocolate cake is actually the perfect picture of my life. Well, it’s the perfect picture of how my life is going. I went to Idaho and told my mom that I made the most delicious dark chocolate zucchini cake in world history.

My mom applauds me and gives me all kinds of praise.

My mom makes the best chocolate zucchini cake for Sunday dinner and I beg her for the recipe.

I was going to have it all, but I really love when she hits me in the kitchen and proves she’s the real chef in the family. Her food is always the best.

What ingredients do you need for a Delicious Zucchini Cake Recipe?

No shockers here, but you need zucchini and cocoa! Mind blown, I know! Then everything else is pretty much the ingredients of a typical cake. Details are below in the recipe card, but here’s your basic menu:

How to make Delicious Zucchini Cake Recipe

Who went to eat a piece of chocolate cake only to find it completely dry and almost inedible? Oh, it’s the worst! You won’t have this problem with Dream Pot Chocolate Cake! The recipe card has all the step-by-step instructions, but here are the basic steps:


  • Preheat the oven and spray a 9×13 cake pan with cooking spray
  • beat eggs
  • Add the other wet ingredients (oil, sugar, vanilla) and mix everything together
  • Mix all the dry ingredients (flour, baking powder, baking soda, cocoa, cinnamon and salt) together in another bowl.
  • Add the dry ingredients and grated zucchini to the wet ingredients and mix until combined

  • 3 egg
  • 1 Cup sugar
  • 1 Cup Brown sugar
  • 1 Cup canola Plus 3 tablespoons
  • 1 small spoon vanilla
  • 2 cups precise
  • 1/4 small spoon baking powder
  • 1 small spoon baking soda
  • 1/2 Cup cacao
  • 1 small spoon cinnamon
  • 1 small spoon salt
  • 2 cups zucchini Grated, no need to peel, about 2 zucchini

to freeze

  • 8 ounce cream cheese Room temperature
  • 1/4 Cup ghee Unsalted, soft
  • 3 cups soft sugar
  • 1/2 Cup cacao unsweetened
  • 1/4 small spoon salt
  • 1 small spoon vanilla
  • 1 Tablespoon Leben Chocolate milk is a game changer if you have it

for cake

  • Beat eggs until smooth and lemon-colored
  • Add oil, sugars and vanilla.
  • Mix well.
  • In a separate bowl, mix flour, baking powder, baking soda, cocoa, cinnamon and salt.
  • Mix the dry ingredients and zucchini into the wet ingredients.
  • Pour into a 9″ x 13″ cake pan and bake at 350 degrees for 30-40 minutes. Insert the toothpick in 30 minutes, if it comes out clean this is done.
  • Allow the cake to cool completely, which can take anywhere from one to three hours, depending on the temperature of your home. Then freeze the cake and serve.
  • Cover leftovers and store for up to a week.


  • In the bowl of an electric mixer using the paddle attachment (or using an electric hand mixer with a large bowl), beat 8 ounces cream cheese with butter on medium/high speed until creamy, scraping bowl as needed. Add vanilla.
  • Sift 3 cups of powdered sugar with 1/2 cup of cocoa powder to make sure there are no lumps, then add 1/4 teaspoon salt. Mix on low speed adding a splash of milk while it comes together. Add an additional tablespoon of milk if needed.
Chocolate zucchini cake can be baked in a small pan for 50-60 minutes.
