This recipe takes a fraction of the time of a homemade ice cream cake and yet it still tastes so amazing. Dress it up with a rose of cold whip, chocolate syrup, and peanuts, or keep it simple, either way, you’ll have a gorgeous cake perfect for birthdays, summer barbecues, or just because!

Combine these 6 ingredients and a 9 x 9 baking dish to start. Here’s what you’ll need to make an ice cream sandwich cake:

  • Ice cream sandwiches – The beauty of this recipe is that you can easily adapt it to any flavors you like! There are neopolitan, cookies and cream, all kinds of chocolate and all vanilla ice cream sandwiches available. I used vanilla flavor!
  • ice cream – I used Moose Tracks but feel free to use another flavor of ice cream!
  • Peanut Butter – This is optional, especially if you are allergic! These layers are layered between sandwiches of ice cream and add delicious flavor.
  • cold whip This tops it all. I also make this cake pretty by putting balls on top!
  • Chocolate syrup – This adds a delicious drizzle to the top. Feel free to use a magical chocolate crust instead.
  • Peanuts – Again, optional but very tasty. You can substitute this with Chocolate Chips, Mini M&M’s, Oreos, or Sprinkles.

Step 1: Prepare the pan

Line a 9×9 or 8×8 square tray with foil.

Step 2: Layer Components

Open 6 ice cream sandwiches and place them in the bottom of the pan, slicing if necessary. It’s okay if they don’t fit perfectly. Any holes you can fill with ice cream.

Spread the ice cream in an even layer over the top of the ice cream sandwiches. Make sure to squeeze any extra ice cream into any holes that aren’t filled with ice cream sandwiches.

Drizzle the top of the ice cream with peanut butter and cover with the remaining ice cream sandwiches. Fill in any gaps with more ice cream.

Step 3: Freeze

Cover and freeze for at least 3 hours until frozen.

Step 4: Decorate!

Remove it from the pan with tin foil and unfold it. Put it on a serving plate. Flatten the outside of the cake with the Cool Whip. Drizzle with chocolate sauce and sprinkle with chopped peanuts. Use any extra cold whip in a piping bag with a big star tip (I used a Wilton 1M). Add the roses to the top of the cake and sprinkle with more chopped peanuts.

Store it in the freezer until ready to serve. Cut it into 16 equal pieces and serve.
