Get ready for this classic beef and broccoli recipe that’s easy to prepare and even easy to eat. With a 30-minute marinade, you’re sure to get lean beef every time. Mixed with steamed broccoli in a delicious sauce is guaranteed to have happy tummies. Not only is it a great meal, but you can also freeze it! Well, I admit it, this list sounds intimidating, but it’s really only 11 ingredients! The beef and broccoli recipe has broken down into four main parts: the marinade, the sauce, and the stir-fry ingredients, plus, of course, the two main ingredients, broccoli and beef. Here’s everything you need

  • broccoli flowers – Fresh is best for this recipe, but you can always use frozen broccoli as a shortcut.
  • Bottom Round Steak – Thin slices! I found mine at Walmart Supercenter.

for salt water

  • I willow – Salty and savory flavors penetrate meat more easily than simply adding table salt, resulting in more flavor.
  • Cold water – This is marinated in the meat to make it more tender.
  • Baking soda – This neutralizes the acids and breaks down the proteins in the meat, making it an ideal laxative.
  • Corn Starch – This coats the meat and helps protect it from overcooking (overcooking = tough).

for the sauce

  • Chicken broth – This provides more flavor than just starting the sauce with water.
  • I willow – More umami flavor. Don’t worry about the saltiness being cut out of the brown sugar.
  • Sesame oil – The sesame flavor that will surround and absorb the beef and broccoli.
  • Brown sugar – This not only reduces the saltiness of the soy sauce but because the sauce reduces the brown sugar it helps in creating a thick, sticky sauce.
  • Worcestershire sauce – For more umami and delicious flavour! Don’t skip this ingredient!

for frying

  • Vegetable oil – This is used to stir the meat. You can also use canola oil.
  • garlic – This just adds a dash of more flavor. I ended up adding four cloves of garlic because I really like garlic, but it’s up to you!

1. Marinate the beef

Put the beef in the freezer for 15 minutes. This is an optional step that will help you cut it a little easier. While the beef is freezing, stir all of the ingredients to season the liquid together. Remove the meat from the freezer and cut it into thin slices across the grain. Stir in the seasoning liquid and set aside for 20-30 minutes, stirring occasionally.

2. Steamed broccoli

Prepare the broccoli by cutting it into florets and steaming it until crisp. You can do this on the stove with a steamer basket or arrange it on a large microwave-safe dinner plate, add 1/4 cup of cold water, cover with plastic wrap leaving part open and unfolded for ventilation, microwave 2-3 minutes or until evaporated to your liking .

3. Make the sauce

In a liquid measuring cup, stir together chicken broth, soy sauce, sesame oil, brown sugar, and Worcestershire sauce. Sit aside.

4. Fast frying

Heat a large wok or non-stick skillet over medium-high heat. Add vegetable oil and garlic and cook for 20 to 30 seconds. Add beef and all the marinade, then cook until browned and almost done. A little pink here and there is good. Add steamed broccoli (drain if necessary before adding to skillet) and sauce. Cook for another 2-3 minutes and serve with rice.

Fortunately, this beef and broccoli recipe lasts up to 4 days in the refrigerator. Which makes a great ready-to-eat meal! Simply store it alone in an airtight container or spread it out in multiple containers with rice on bottom. The rice will absorb all the excess sauce, making this dish quick and easy to prepare meals for the week ahead.

To extend the shelf life of this meal even further, consider making a double batch and freezing half of it for up to 4 months! Simply store in a secure, airtight frozen container. Then when you’re ready to serve it, defrost it in the fridge overnight and heat in a skillet.
