  1. Heat the oven to 350 degrees. In a large mixing bowl, mix 1 cup creamy peanut butter, 1 cup sugar, and 1 egg until smooth.
  2. Pour the dough onto parchment paper or a Silpat lined baking tray. (Roll the balls into 1 shape with your hands, if you don’t have a scoop.)
  3. Press down with the back of the fork and press again from the opposite direction, forming a crossover pattern at the top.
  4. Bake for 12 minutes, then let cool on tray for 1-2 minutes before removing on a wire rack to finish cooling. Store in an airtight container.
