peach galette…sounds cool, doesn’t it?! Well, don’t let the cool name put you off. Galette is a French word that simply means crunchy, flat, and sour cake. It is similar to a pie but baked on a cookie sheet rather than a pie plate. It’s an easy dessert that looks impressive but takes no time and hardly any effort to assemble. The more rustic the better! We devoured this quickly! And I didn’t have any vanilla ice cream on hand, so the fresh whipped cream had to do. But, do me a favor and serve this hot with ice cream! You’ll be glad you did!

Here’s what you’ll need to gather from your pantry to make a Peach Galette. If you’d rather make a pie crust from scratch, feel free to do so!

  • pie crust Store-bought or homemade! Here are my two favorite homemade versions: an all-butter pie crust and an all-butter pie crust.
  • peach – Fresh is the best in this case! Peaches are in the summer season and are perfect for get-togethers. You can use regular peaches or another type of different flavor.
  • Flour – This coats the peaches and absorbs their juices (you may need more depending on how juicy the fruit is).
  • salt – To balance all the flavors.
  • cinnamon + sugar For sweetening and flavor.
  • Fresh orange juice To add flavor and hydration.
  • heavy cream – Spread it over the top of the galette and cover it with sugar. I love this crunchy texture!
  • ghee – the cold. Cut into small pieces and place over galette for baking.
  • Vanilla ice cream and/or whipped cream – To serve with your galette. Use either homemade or store-bought.

This is a simple peach galette recipe, but don’t let that stop you from substituting some peaches for another fruit you love. Here are some common peach galette forms:

Simply prepare the fruit (wash, chop and/or peel) and then add in place some peaches. The combination of flavors is so delicious!

How to make Peach Galette Recipe?

Step 1: Peach Blanch + Preheat the Oven

Bring a large pot of water to a boil. Cut a small “x” into the bottom of each peach. Gently drop the peaches into the hot water for 30 seconds, then remove and immediately submerge them in the ice water. Once cool enough to touch, remove the peel. It should peel off immediately.

Step 2: Cut the peaches into slices

Step 5: Bake {note the oven temperature change}

Bread 15 minutes ago. Reduce heat to 325 and continue baking for 20-25 minutes Until the pastry is brown and the peaches are soft. Cool for at least 20 minutes before removing from pan and serving with vanilla ice cream and/or whipped cream.

Storage Instructions

While Peach Galette is best eaten the day it bakes, it can be covered loosely and stored at room temperature. for up to two days.

Can I make a peach galette ahead of time?

Yeah! The dough and filling can be prepared ahead of time and stored in airtight containers in the refrigerator for up to 3 days.

Baked Galette freeze Good for up to 3 months. Simply defrost in the refrigerator overnight, then serve warm.
