So, I mixed in a simple herb, lemon vinaigrette, and then turned my eyes to the dipping sauce, and my friends, this dill feta sauce is so good! I absolutely and unabashedly love her.

I suppose I’d better confess my love of feta del sauce and then say, that guy who plays Jimmy in Outlander. With his smiling devilish grin, hairy golden tufts of hair, high kilt, intense focus, and incredibly sexy Scottish brogue. No, I hardly noticed. It’s not like I follow him on Instagram or anything. Back to the recipe. I went with dried herbs for the seasoning for convenience and cost factor. Unless you have a thriving herb garden in your yard, using fresh herbs in a herb-dense recipe like this can be pricey. For an easy Greek dressing

  • Greek seasoning Check the spice aisle at the grocery store for a Greek spice blend. They usually contain onions, garlic, sea salt, and a variety of spices, including a touch of mint. Some blends can contain MSG, so you’ll want to check the label if this is an issue for you.
  • garlic Fresh minced garlic.
  • Salt/freshly ground black pepper
  • Dried rosemary and thyme To help enhance the flavors of the Greek spice blend.
  • Lemon juice Fresh lemon juice (do not use bottled).
  • Extra virgin olive oil

Combine dressing ingredients in a small bowl and set aside.

To prepare the dill feta sauce

  • Greek Yogurt – I use plain fat-free Greek yogurt but full fat or 2% would work too.
  • mayonnaise Eat healthy mayonnaise such as olive or canola oil and mayonnaise.
  • Vita – Adds a distinct, refreshing, and sharp flavor. Feta cheese is naturally lower in fat and calories than most other cheeses – a bonus!
  • Lemon Juice of half a lemon.
  • garlic Fresh minced garlic.
  • dill I like to use fresh dill when possible but you can replace it with dried dill if you like.
  • Salt/freshly ground black pepper

Combine all feta sauce ingredients in a small bowl. Cover and put in the fridge until ready to serve. You can prepare the sauce 8 hours in advance.

  • chicken Boneless, skinless chicken breast, cut into 1-inch cubes.
  • zucchini You will need two large zucchini, halved and sliced.
  • mushroom I use meaty cremini mushrooms. Rinse it and then dry it with a paper towel.
  • paprika Add a splash of color with two red bell peppers. Remove the seeds and chop them into large pieces
  • Onion One large red onion halved and cut into thick slices

  1. Place the chicken cubes in a gallon-size resealable plastic bag. Pour half of the marinade over the chicken, seal the bag and turn the bag a few times to distribute the marinade.
  2. Put the vegetables in a separate bag with the remaining dressing. Refrigerate chicken and vegetables for 3 to 6 hours.
  3. While the grill is preheating or the charcoal is starting, place the marinated chicken and vegetables on water-dampened wooden or metal skewers. I like to stack them on a baking sheet lined with aluminum foil for easy transfer to the grill. Refrigerate until the grill is ready, if necessary. Grill the kabobs over low heat, stirring frequently, until the chicken is well cooked and the vegetables are soft and tender.

  • 1 ½ pound or pounds for weight Boneless, skinless chicken breast cubic

  • ¾ cup Plain fat-free Greek yogurt
  • ¼ cup mayonnaise I love mayonnaise with olive oil
  • ¼ cup feta collapsed
  • ½ Lemon squeezed
  • ½ small spoon minced garlic
  • 1 to 2 big spoons Fresh chopped dill (plus extra for garnish) Or 1-2 teaspoons of dried dill
  • Salt and freshly ground black pepper to taste

I usually use 3 cubes of chicken on each skewer and alternate with a mixture of vegetables. Refrigerate the collected kabobs, if necessary, until the grill is ready.

  • Grill the kebabs over low heat, stirring occasionally, until the chicken is well cooked and the vegetables are cooked through. A chicken should register 165 degrees Fahrenheit when tested with an instant-read thermometer.
