Heavenly French Onion Chicken Recipe

Well, guys, I’m not sure I liked any chicken more than I liked the French Onion Chicken Recipe. It’s everything you want for dinner: delicious, sweet, and cheesy, made in one skillet and ready in under an hour. It’s basically all the ingredients for a French onion soup, but flip it on its side to make the most delicious chicken dish.

While the chicken is cooking very quickly, you should take your time with the onions, the caramel in the skillet low, and slow in the butter, and olive oil with salt, pepper, bay leaves, and thyme. It takes 20-30 minutes to caramel and it’s definitely a good time. Onions turn from raw and sharp to soft and sweet. The magic lies in the onion caramel, so make sure you spend your time on this step.

Main components of French Onion Chicken Recipe

You may need to visit the store to pick up a few of these ingredients, but trust me, it’s * so * worth it! The French Onion Chicken makes a great Sunday dinner or special occasion meal everyone will love. Here’s what you’ll need:

  • gheeThis is used in cooking chicken and in broths to add flavor and softness.
  • olive oil – Used to cook chicken. Olive oil has a higher smoke point than butter, so both are used to ensure the chicken is cooked well and with the best flavor possible.
  • chicken breast – While I was using chicken breasts for this recipe which I cut to be 1/2 inch thick, chicken thighs can be used interchangeably. Just be sure to trim them well.
  • Salt + pepper – An obvious seasoning for chicken and this dish as a whole.
  • Yellow onion – It is cut into thin slices so that they caramelize evenly. Feel free to use Sweet Maui onion if you want something sweeter.
  • Thyme + bay leaf – Two classic herbs found in this delicious French onion soup flavored with French onion chicken, too.
  • Marsala, sherry, or red wine – The jury is out on the right kind of wine to use to be traditional, but I used marsala because it was on hand and I love the sweet notes it adds to the sweet caramelized onion.
  • Beef broth – The classic choice for pure French onion soup, but you can definitely substitute chicken broth in a pinch.
  • Flour – This is used to thicken the broth.
  • Gruyère cheese – Rich, creamy, salty, and nutty; Don’t skimp on this ingredient, believe me.

How to make French Onion Chicken Recipe

1. Cook the chicken

Place a large non-stick frying pan over medium heat. Add 1 tablespoon of butter to the skillet. Sprinkle salt and pepper on both sides of the chicken. Add to the preheated skillet, brown on both sides, and cook well to 165 degrees Fahrenheit. Transfer the fried chicken to a plate and cover it with aluminum foil.

2. Caramelized onions

Add to a hot skillet a tablespoon of butter and one tablespoon of olive oil. Add onion, thyme, bay leaf, salt, and pepper to the skillet and stir to coat with spices, butter, and oil. Slowly cook, stirring occasionally, for 20-30 minutes or until completely soft and cooked. If the onions are browning before they soften, the heat may be too high. Reduce the heat and continue cooking.

3. Make a French onion stock

Once the onion is completely soft and brown though, remove the glaze in the skillet with marsala wine and cook it in half (it shouldn’t take long). Add beef broth. In a small bowl, stir the butter and flour together to make a paste. Add it to the skillet to thicken the broth. Stir and cook for 1 minute. Reduce the heat to a low setting, and once the onion is completely soft and completely brown, remove the glaze in the skillet with marsala wine and cook it in half (it shouldn’t take long). Add beef broth. In a small bowl, stir the butter and flour together to make a paste. Add it to the skillet to thicken the broth. Stir and cook for 1 minute. Reduce the heat to a low.

4. Chicken return + cheese

Add chicken and cover until warm for 3 minutes. Add grated gruyere cheese to the chicken and cover until completely melted for a minute or two.
